My Carlsdotter brings a distinctly international sensibility to her position as Restaurant Manager at First Mates, Last Laugh. Overseeing the front of house of this busy Westhaven Marina restaurant, her role is equal parts demanding and rewarding. Ensuring excellent, fast-paced service while keeping the atmosphere humming and consistent from busy lunch services that transition into seamless evenings, is not a job for the faint of heart. Yet Carlsdotter’s insight, attention to detail and ability to read the room ensure every guest leaves having had a fantastic experience.
Carlsdotter’s journey in hospitality was initially shaped by a desire to see the world. Born in Sweden, in her early twenties, she worked her way through the vast and varied European hospitality industry, from running food in a mountainside restaurant in Austria to working as a kitchen hand in hotel kitchens and brewing coffee at a seaside trattoria off the coast of Sicily. Each of these experiences added another facet of the industry to her resume, while also exposing her to different cultures, cuisines, and service approaches. After a stint in Australia, she eventually landed in Queenstown in 2013, where she finally committed to turning her travel aspirations into a serious long-term career.
A pivotal moment came when she formed part of the opening team at Onslow, with Josh and Helen Emett, where Carlsdotter experienced firsthand the intensity and rewards of building a restaurant from the ground up. It sharpened her operational instincts and cemented her ability to lead under pressure. Alongside this, she credits mentors including Judith Tabron, Katie Woodhead and Jane Leong as instrumental in shaping her leadership style, particularly their resilience and clarity in fast-moving environments. Today, she thrives on the pace and unpredictability of hospitality, drawn to the energy of a full service, the connections formed both within the team and with guests, and the fact that she has found her calling.
After Hours — My Carlsdotter
Restaurant Manager, First Mates, Last Laugh
When I do get the chance to step away from the floor, Alma is my go-to. The service is casual but attentive, the food is designed for sharing, and the cocktails are always on point. What really stands out is the consistency. It’s one of those places you can rely on, whether it’s a quick catch-up or a longer, more relaxed evening.
After a long shift, I usually crave something comforting, and the seafood laksa from Selera always delivers. It’s quick, full of flavour and exactly what you want at the end of a busy service. More recently, I’ve also been starting my mornings at Mibo in Milford for coffee and a croissant; these two simple pleasures done well set the tone for my day.
For an escape from the city, Craggy Range Restaurant consistently impresses. The food, service, wine and setting all come together in a way that feels seamless; you notice it the moment you arrive. It’s the kind of place that reminds you just how good hospitality can be when every element aligns.
Closer to home, Ooh-Fa in the city is warm, fun and always feels good. The food is great, the staff are lovely, and it has that kind of energy that makes you want to stay longer.
