Ayrburn’s Mid-Winter Christmas Wonderland experience kicks off this week, and we have all of the details

Cassia's Husband-and-wife duo Sid and Chand Sahrawat, along with Cassia's first chef Lesley Chandra

Cassia is celebrating 10 exceptional years of operation — throwing a celebration you don’t want to miss

Husband-and-wife duo Sid and Chand Sahrawat are stalwarts on Auckland’s dining scene — their contemporary Indian eatery, Cassia, loved city-wide for its vibrant fare and lively atmosphere. Opening on Fort Lane in 2014, Cassia was born from Sid and Chand’s desire to share the food they cooked at home surrounded by family. As such, the inspiration for the eatery was the traditional dishes of Sid’s childhood fused with Chand’s delicious home-cooked curries, and while Sid’s professional experience had been predominantly with European Cuisine, the pair saw an opportunity to show New Zealand how spectacular and complex Indian cuisine could be.

Cassia’s Fort Lane eatery (2014 – 2023)

Cassia instantly solidified itself as one of the city’s go-to dining destinations, with a menu that encapsulates Sid’s signature modern Indian fare, marrying classic, crowd-pleasing favourites with inventive dishes sure to satisfy.

Cassia operated on Fort Lane for close to nine years before the eatery suffered at the hands of a number of unfortunate weather events forcing its closure multiple times. The Sahrawats finally made the call to close the Fort Lane address, and reopen with a brand new lease on life on Federal Street at SkyCity in 2023 — a location that feels like it was always meant to be. The SkyCity precinct is a location dedicated to the very best in global gastronomy, where Cassia, dedicated to serving modern Indian with a Kiwi slant, sits alongside the traditional flavours of the Pacific in Michael Meredith’s Metita, elevated Japanese cuisine at MASU by Nic Watt, classic American deli eats at Al Brown’s Fed Deli, and the finest Chinese dining experience at Huami.

Cassia on Federal Street at SkyCity

The ‘new Cassia’, much like its predecessor, enlivens the concept of ‘Agni’ (fire, light and warmth), offering an intimate, cosy, and chic mix of dim lighting, vibrant artwork, and comfortable corners to settle in for an exceptional culinary experience.

As Cassia marks 10 years in business, the Sahrawats are celebrating in fitting fashion, with an unmissable event celebrating Indian flavours and modern techniques, reflecting the journey of Cassia over the last 10 years. The celebration will see Cassia’s first chef, and now-owner of Sidart, Lesley Chandra, join Sid in the kitchen to craft a bespoke menu bringing together the best of Cassia — from 2014 until today. “Lesley was our first head chef when we started Cassia in 2014 and helped shape the vision,” Sid and Chand tell us, “So it was only fitting that we bring him back to celebrate a decade of Cassia with our incredible guests.”

Cassia’s Bollywood Nights set menu

The one night only event, taking place on Thursday July 18th from 5pm, will take diners on an enticing journey through the last decade of Cassia — with 10 bespoke dishes (marking 10 years of Cassia) and beverage matches, all expertly crafted by Sid and Lesley to bring the essence of the eatery to life. Here, you can expect to find the likes of flavourful Pork Vindaloo Fritters, delicate Wagyu Tartare with spiced beetroot, truffle emulsion, and green chilli, and the duo’s delectable Hawke’s Bay Lamb Chops served with chapli kebab and a dry korma, as well as an unmissable dessert marrying dark chocolate with fresh mango, coconut, and honey. Tickets are $195 per person, and include 10 bespoke dishes and beverage pairings.

Left: Cassia’s Bollywood Nights set menu. Right: Sid Sahrawat

As Cassia marks this milestone it’s evident that, despite being in business for a decade, this is just the beginning. With Sid in the kitchen creating culinary magic, and Chand on the floor ensuring the very best experience for those visiting, Cassia offers an unmatched dining experience in the heart of the city — and, based on the last decade, we’re certain that the Sahrawats still have a trick or two up their sleeves.

One of the city’s top chefs has just opened a delicious new eatery in Mount Eden — meet Parro

With a wealth of experience, including a stint at one of the world’s best restaurants and time spent in the kitchens of some of the city’s most-loved eateries (including Amano, Lillian, and Depot) Gleber Chaparro is one of the city’s top culinary talents, and his new spot, Parro, is set to bring something exceptional to Auckland’s dining scene.

Croqueta

A Mediterranean-inspired eatery on Dominion Road in the space that once housed Omni, Parro is Chaparro’s first solo venture, and according to the chef, a concept that has been brewing in the back of his mind for some time, “The idea of Parro, like me, has evolved over the years — in the kitchens I’ve worked in, and the places I’ve visited,” he tells me, “but I can say that on my last trip to Europe, spending time in Spain, Portugal, Italy, and France, the clarity of what this restaurant would be finally came to me.” The mark of a true chef, Chaparro’s passion is worn on his sleeve — evident in how he describes the idea behind Parro’s offering, “Mediterranean flavours, which are of an immeasurable variety, have always enchanted me,” he muses, “Parro has a Mediterranean influence; fire, embers, smoke, and a little poetry.”

And from what we’ve seen, poetry quite aptly describes what is happening in the kitchen at Parro. Given Chaparro’s incredible, diverse experience, the Brazilian chef who got his start as an Engineer in Brazil before eventually pursuing his passion for cooking as a career, marries incredible skill with an innate creativity to craft dishes that draw from various cuisines to offer something unique. “I’ve always liked the idea that less is more,” Chaparro tells me, “[At Parro] I will use many modern techniques that I’ve learned over the years, as well as French, Spanish, and Italian bases, and a lot of smoke.” he continues, “I like to use acidity to bring balance to dishes, as well as fermentation, and like any good Brazilian, lots of barbecuing!”

Tortellini
Left: Chef, Gleber Chaparro. Right: Lamb shoulder

As such, on the concise menu, you’ll find the likes of BBQ Fish with pil pil, gambas, chicken jus, and charred carrots; Chargrilled Steak with salsa de pimiento rojo, calçot, and beetroots; Arroz Bomba with grilled prawn, mussels escabeche, capers sofrito, and saffron aioli (Parro’s elevated taken on a Spanish paella), and a chicken brodo and pangritata tortellini. There are also a number of exceptional sides and starters to accompany larger dishes, with Chaparro telling us that the Cured Raw Fish with white gazpacho, grapefruit orange dressing, and mandarin is a standout, and the handmade BBQ Flatbreads are a must-order.

Cured raw fish
Right: Arroz bomba

When it came time to curate a drinks list that perfectly compliments the exceptional fare on offer, Chaparro looked to Dan Gillet from Everyday Wines for support, “I set out to create a small but diverse list of delicious drinks and wines from all around the world, inspired by my travels and time spent working in some of the world’s best restaurants,” says Chaparro, “Dan is a master in the world of wine — I couldn’t imagine anyone better to help me with our drinks list.” Gillet is of course incredibly adept at curating a perfect drinks offering, no matter the venue, and when it came to Parro he looked both near and far, ”For the wine list, I have taken on wines and styles we all know and love and supplemented that with wines from small, unique producers from around the globe that work with Gleber’s food and style of cooking.” Gillet tells us, “The result is a concise, thoughtful, and universally delicious wine list with something for everyone.” You’ll also find your favourite cocktails on the menu alongside tap beer and a selection of bottled beer and cider.

Left: Charred beef carpaccio
Chargrilled steak

When I ask Chaparro what kind of vibe he’s aiming to create at Parro given that he has worked at both formal and more casual, bistro-style eateries, he assures me it will be casual, “I’ve worked in fine dining restaurants, but this won’t be the Parro vibe — the atmosphere will be casual; a place where you want to go for a chat with friends, a date, or a spot to take the family out for dinner.” Setting out to create a space that was “minimalist but well thought-out”, Chaparro employed the expertise of Aisha Ajaani to bring Parro’s interiors to life. The result is a pared-back, light, and casual eatery with a clear Mediterranean influence. With polished concrete floors, simple wooden tables, and bench seating lining the entirety of the right-hand wall, the open kitchen becomes the focal point — inviting diners to witness the clever chef at work.

Right: Tiramisu

Parro is more than just a restaurant; it’s a tantalising fusion of cultures, flavours, and experiences. From its laid-back interiors to its inventive fare to its exquisite drinks list, this new eatery promises a truly enchanting and unmissable dining experience.

If you have plans to head South to Queenstown this winter, you have likely scheduled a visit or two to Ayrburn. The sprawling hospitality precinct on the outskirts of Arrowtown has fast-become the place to be in the area, with something on offer for every age and proclivity, and despite there being an impressive year-round rota of events, and a number of eateries — each worth the visit alone, winter is when Ayrburn really comes into its own.

A long-time favourite of Team Denizen, Amano is without a doubt one of the city’s finest eateries. Offering exceptional, Italian-inspired fare from sunrise to sunset, made using only sustainable, locally sourced and in-season produce from New Zealand growers and farmers.

Given the emphasis placed on honouring the seasons, Amano’s menu is ever-changing, and this winter there are a host of exceptional new dishes and drinks joining the fold, as well as seasonal additions to exciting favourites. In celebration of Winter Solstice, the stalwart eatery has a number of enticing new dishes and drinks on offer which are perfect for enjoying on the year’s shortest day.

SLOW ROASTED LAMB SHOULDER

The ultimate winter indulgence, truffles have joined the menu at Amano, available on any dish diners desire, or order Amano’s handmade tagliatelle with truffle and parmesan.

The lamb shoulder is a classic Amano dish, slow-cooked and served with pickles, yoghurt chilli, and currant dressing with piadina. This is the ultimate, comforting winter dish, perfect for sharing between two to four diners with a selection of tasty sides.

Amano is known for offering some of the best pasta in town, and their Cacio Pepe — the perfect antidote to the inclement weather, is back on the menu, much to the delight of discerning diners across the city. Simple, satisfying, and a must-order.

Also back on the menu is Amano’s classic side — crisp cos lettuce served with anchovy, parmesan, and goddess dressing. No trip to Amano is complete without this winter staple.

On the drinks front, things have taken a welcome wintery turn, with two new cocktails and a decadent hot drink being added to the menu. The newly added pear cocktail is a winter delight, combining bourbon, applejack, nocello and seasonal pear to offer the ultimate cosy cocktail. Regulars will also be pleased to know that Amano’s infamous Spicy Margarita is back in the mix — a unique take that combines kiwifruit, tequila, martini bianco, and Cointreau. With exceptional coffee and a tasty all-day menu, Young Dandy is the laid-back new cafe in Parnell you need to try

“Vibes, vibes, vibes indeed” is what you’ll find at Young Dandy, a laid-back new cafe in the heart of Parnell that opened its doors last week. Owner/operator James Prendergast set out to create a fun, relaxed, and above all, welcoming spot that turns out epic food and great coffee, with consistently excellent service. Sounds easy, right? Not really, but from what we’ve seen so far, Prendergast has hit his mark.

Right: Vadouvan spiced mushrooms

Having spent the last two decades gaining international hospo experience through his time spent living and working in the UK, North America, Australia and New Zealand, Prendergast fell into a career in hospitality organically, as many do, but what he found was much more than he could ever have anticipated when starting out. Working with Ozone Coffee in London, he jumped at the chance to relocate to Auckland to open their Grey Lynn site in 2019 as the Restaurant General Manager, “The way the Auckland community embraced Ozone made it such a special time,” he recalls, “I then knew that Auckland was the place I wanted to sink my teeth into and open my own place. I have been a Sales Manager for Ozone Coffee wholesale for the past two years, supporting people to build their own dream cafe spaces. Now it’s my turn.”

Unsurprisingly, given Prendergast’s background, Young Dandy is a cafe with a core focus on speciality coffee, paired with, in his words, “damn fine everyday food and attention to service.” He tells me that, for him, a cafe needs to embody community and be accessible to its everyday customers, which is why Young Dandy will be operating seven days a week.

The Fish Toast

Spotting a location in Parnell that matched his vision for a place of his own, Pendergast set to work, getting stuck in and taking on the bulk of the design work himself. Having a background in Fine Arts means Prendergast possess an effortless attention to detail that has set him in great stead, and after a trip back home to Europe last year, he found that the hospo businesses that Inspired him most had really simple approaches to their fit out design, “They were typically small and intimate environments which had unique appeal to me,” he recalls, “The space Young Dandy is in is naturally stunning, with exposed brick and concrete flooring which you don’t often come across in Auckland — especially brick. It made me want to keep things simple, because the materials are features in themselves.” he continues, “I decided to make a lot of the furniture myself, which I saw as another way of being able to express myself in the space.”

On the food front, the focus is on everyday food, done well. “Young Dandy is serious about the execution of simple things,” Prendergast tells me, “As we’ve been working on the menu, we’ve constantly been guided by the idea that our food has to be uncomplicated. Simple, but excellent.” As such, you’ll find breakfast and brunch classics that we all know and love, with the addition of lunch specials to appeal to the local business community. Heading up the small kitchen is Amy Barrowclough (previously Ozone Coffee’s Head Chef), and, according to Prendergast, immediate favourites are the Smoked Brisket on Corn Bread, the Beetroot Falafel Salad, and the decadent French Toast on the weekend. There’s also a cabinet with a curated collection of the classics, with plans to expand into catering for local businesses later in the year.

When it comes to the drinks on offer, great coffee comes first, with a delicious selection of teas, juices and smoothies made in-house. There are plans to expand the offering to include beer, wine, and cocktails, with Pendergast excited to bring his years of wine and cocktail experience into the menu.

Southern Station Wagyu Brisket

Having only opened last week, Young Dandy is already making a name for itself — embracing locals like old friends, and serving up what we’ve heard is some of the best coffee in town. In James’ words, “Young Dandy is about community, from the people who work here to our customers and people who use the space. Parnell has seen a few new businesses come to the area recently, and I’m so looking forward to being part of that new wave and contributing to the Parnell community.”

With plans to expand into events — from cooking classes to book clubs and coffee workshops, and a few exciting chef pop-ups on the horizon, it’s clear that what Prendergast has set out to create with Young Dandy is much more than a laid-back local. Although it’s very much that too. Watch this space.

Opening hours:
Monday to Friday, 7am until 3pm
Saturday to Sunday, 8am until 3pm
