Based on a historic working farm located on Canterbury’s Banks Peninsula, Preserved cooking school offers ‘Pig in a day’ courses that interactively demonstrate the eventuation of Pepper Pig into a variety of salted, brined and cured pork products including salami, chorizo, prosciutto and bacon. The hands-on tutorial includes a charcuterie inspired lunch with wine accompaniment followed by an afternoon introduction to sausage making that will have you a DIY convert in no-time. The workshop transpires in a small and relaxed environment using only natural processes and locally sourced products. With a level of technicality suited to novices and chefs alike, ‘Pig in a day’ courses are fitting for all who have a passion for the swine.
