There's no doubt that these are some of the most considered cocktails in town.
Though we are lavishly spoilt for choice when it comes to drinking and dining options in Auckland — especially on the waterfront — one thing that never fails to capture the attention of the masses is the launch of a new rooftop bar. And, when said rooftop bar is the brainchild of the talented folk behind Ponsonby’s beloved Mea Culpa, you know the excitement is warranted. The Parasol and Swing Company is the new downtown opening to have snagged one of the most coveted spots overlooking the action of the Viaduct Harbour. The two-level charmer boasts a casual eatery on the ground floor and sun-drenched rooftop bar above.
In the restaurant, O’Connell St Bistro’s Mark Southon has lent his expertise to create an easygoing menu of waffles and burgers. Described as a place where ‘the USA meets Asian-fusion’, they are the dishes you know and love (hamburgers, fried chicken waffles) with unexpected Oriental tweaks. The kind of cuisine that deserves to be enjoyed with a frosty beer and a responsibility-free afternoon, it can be devoured in the restaurant or alongside a few beverages on the upper floor.
Dedicated to honouring the history and craft of bartending (in the most palatable way possible), the boutique wine, craft beer and Champagne selection at this newly minted waterfront locale is up there with the city’s best, but the cocktails are what truly shine. Available on-tap, by the bottle or hand-muddled by the virtuosos behind the bar using modern techniques and bespoke, house-made ingredients, the flavours are entirely inventive and wholly impressive. A magnificent place to enjoy a few sundowners in style, The Parasol and Swing Company is set to become one of the summer’s most popular hangouts.
The Parasol and Swing Company will open on Thursday 30th November.
